Winter Pale Ale
A 3 gallon recipe, and my first try at all-grain brewing. The idea is for this to be somewhat like Sierra Nevada Celebration Ale.

6.5# 2-row malt
0.5# 120L crystal malt
0.25# 60L crystal malt
0.5 tsp gypsum
0.5 oz chinook (60 min)
0.5 oz centennial (45 min)
0.5 oz centennial (30 min)
0.5 oz centennial (15 min)
pinch irish moss (15 min)
0.5 oz cascade (cooling)
0.5 oz cascade (dry)
0.5 oz centennial (dry)
American Ale Yeast (wyeast #1056)

OG: 1.052

Heated water with gypsum to about 160F. Added grains and kept at 150F for about 70 mins. Strained and sparged with boiled, slightly cooled water. At this point, volume was about 4.5 gal (sparge less next time). Brought wort to boil and added hops according to schedule above. Chilled quickly, strained, pitched yeast (78F), and added dry hops.
