Pale Ale
I think this is my favorite, so far. It's smooth and well balanced.

6# Alexander's Pale
2# Extra-light DME
0.75# 80L British Crystal Malt
1 t gypsum
1.5 oz Chinook (60 min)
½ t irish moss (15 min)
0.5 oz Chinook (steep)
British Ale Yeast (Wyeast #1098)

OG 1.058

Briefly steeped grains in about 160-170F water. Strained and sparged. Added 3 gal tap water and gypsum, and brought to boil. Added extracts and returned to boil. Added boiling hops and steeping hops at the appropriate times. Cooled with wort chiller and strained into fermenter, adding water to make ~5.5 gal. Pitched yeast at 76F. Noticed significant precipitate at hot break and cold break. Will get rid of it at racking time. Noticeable amount of sediment 6 hrs after racking.
