Tastes yummy! Smooth and good flavor. A little chill haze.

4 # Alexander's
2 # light DME
0.5 # Aromatic Malt
2.75 oz Cascade - 60 min
1.25 oz Cascade - steep
British Ale Yeast (Wyeast #1098)

FG 1.012

Used ½ filtered water and ½ unfiltered water. Heated the malt to 170F - need a thermometer that can sit in the pot. Strained and sparged malt with boiled water. Started the wort with 2-3 gals water, but it seemed to boil down to very little. Cooled wort in sink ice bath and added to water in primary fermenter (plastic). Strained and sparged hops with boiled water. Did not wait for the yeast to fully prime. Pitched yeast at about 70F. Held wort at 70F for 6 hrs and then dropped to 58-62F. Kraeusen not present after 18-24 hrs; present after 39 hrs. Racked after 95 hrs (4 days). Added ½ gal water after taking RG reading (oops! Next time I'll add boiled and cooled water). That's about 5% and should lower the specific gravity by .001. Fermented mostly at 60-62F, but raised the last week to 70F. Bottled with ¼ c corn sugar. Develops enough carbonation after 4 weeks.
