Bitter Bear
I had thought this would turn out like Boddington's Bitter, but it was not to be. It came out very mild-tasting. Smooth, but lacking any interesting qualities whatsoever. And not even the least bit bitter. Maybe I should feel a little bitter...

3 # US 2-row malt
1.5 oz black patent malt
3 # amber malt extract
1 # light dry malt extract
1 tsp gypsum pinch irish moss
1.5 oz Fuggles (60 min)
1 oz Cascade (15 min)
0.5 oz Fuggles (steep)
British Ale Yeast (1098)

Put 3 gal water and gypsum into brew pot and bring to boil. Meanwhile, heat 2 gal water to 170F and added crushed grains. Hold at 170° for 45 mins. Strain and sparge with heated water. Bring mixture to boil again and add dry and liquid extracts. When boiling again, put in 1.5 oz Fuggles and start timing. After 45 mins, add 1 oz Cascade and irish moss and boil 15 more minutes. Remove from heat and add 1.5 oz Fuggles. Cooled quickly, strained with cheesecloth, and diluted to 5 gal. Yeast from stout2 primary fermentation was washed and pitched.
